Wednesday, February 04, 2004 Road Kill!! Yum, Yum! In most places, the thought of eating road kill is probably a great way to force yourself to stick to a diet. But that's not true in Alaska. Several hundred moose a year are killed by car accidents and the way the State handles the matter is by a Road Kill List. Churches and non-profits get on the list and then distribute the meat, mostly to the needy but also to all who can use it. Those who sign up on the list must respond immediately to the call that a moose has been hit. If it's 2:00 in the morning and 30 below, too bad. The people must then remove all the moose: hair, guts, blood, etc... Nothing can be left behind. Monday night I BBQ'ed a little section of road kill on the grill, preparing it precisely as I would beef. Moose meat has less fat than grain fed beef, usually meaning it has a little less flavor, but other than that is delicious with very little "gamey" taste. Road kill, anyone? |
